Job Description: We are seeking to expand our bakery production team with a full time employee to help meet the needs of our growing French bakery! The ideal candidate will be passionate about the local small business/food community, thrive in a dynamic work environment, and be looking to grow along with the company. The bakery production manager will be win charge of the bakery production and production team for Cocorico Cuisine.
Key Roles:
- Manage team members and their schedule on a day to day basis as well as on a long term growth level.
- Plan the daily and weekly production at our commercial kitchen.
- Manage the inventory, ingredient ordering processes and oversee the limitation of waste.
- Refine current kitchen processes to help meet company profitability goals.
- Oversee quality, consistency and high standards for our products.
- Contribute to our company goals and culture by sharing your input, carrying Cocorico Cuisine core values in your work every day and providing consistent reporting to the CEO.
Responsibilities:
1. PEOPLE: Lead and manage the Cocorico kitchen team.
In charge of the hiring and execution of Cocorico’s training processes for the team members.
Schedule staff so that each shift has the optimal number of people to complete production
Have scheduled meetings and evaluations with shift leads to ensure their progress with training new staff members, progress towards their personal goals/missions and communicating any issues that arise to the owner.
2. PRODUCTION: Plan and organize the production for the first and second shifts on a daily/weekly/seasonal basis. Plan production in advance to prepare for market season, catering needs and holiday seasons and communicating any upcoming changes to staff.
The shift leads have a plan for the day and know what is expected of them for the day.
All of the products needed each day are prepared, meet Cocorico standards and sent to the correct locations.
When complications arise, communicating and working with the owner and/or shift leads to solve problems as a team and adapt the plan for the day as needed.
3. PROCESSES: Make sure our kitchen processes, packing processes and recipes are up to date at all times and we are using everyone’s knowledge and input to work smarter and not harder every day.
Document changes, improvements and simplifications.
Update recipe cards and processes on a monthly basis and as needed.
4. OPERATIONS: Manage the inventory and ordering processes to optimize production and minimize waste. Keep profitability at the forefront of one’s decisions to ensure that Cocorico has longevity and can invest back into its staff.
Make sure the kitchen has all of the ingredients and supplies they need to get their work done
Help source ingredients/packaging at the best possible price and quality
Keep track of waste, generate reports on financial loss and develop goals for each quarter to reduce waste
5. QUALITY: Control the quality of the goods produced by the kitchen staff to ensure consistency and excellence.
For every product, ensure that quality and standards are defined, documented and communicated to the team.
6. COMPANY CULTURE: Be a protagonist of our company's success, stay connected to other team members and contribute to the implementation of Cocorico’s values.
Attend meetings as scheduled, which include but are not limited to weekly meetings with peers managers.
Attend weekly meetings with the owner to discuss personal growth and progress towards missions.
Participate in learning opportunities to drive professional and personal growth.
Represent the company’s values in your day to day work activities and encourage their implementation among team members. Values include, but are not limited to, communication, team player attitude, accountability, care and ongoing learning.
Qualifications:
Excitement for French/European cuisine and a desire to learn new skills, as well as a willingness to learn about French baking culture, trends and locally sourced ingredients available on the market.
- At least three years of management experience in production management at a high volume commercial kitchen and a strong ability to lead a team and support each team member.At least one year of baking experience
Strong organizational and time management skills with a detail oriented mindset to ensure the optimal work performance
Problem-solving mindset with the ability to suggest and implement new strategies to increase productivity
Strong work ethic, reliability, honesty and positivity
Ability to communicate and be transparent with co-workers and other departments with professionalism and respect
Physical requirements include the ability to stand for extended periods, lift and carry up to 50 pounds as well as bending, kneeling and reaching to perform various tasks.
